About the Event

Join us for this special evening featuring 3 iconic & highly celebrated sake brewers. Get a quick overview of this ancient beverage, followed by a walk-around format where you can taste and engage with the Tojis (brewers). 

The technique to ferment rice into an alcoholic drink was developed in ancient China. It arrived to Japan about 2,500 years ago along with the cultivation of rice. Cut to 2023, sake has become one of the hottest beverage categories as it is delicious and comes with the added bonus of being one of the most helpful alcoholic beverages.  Our second sake event this year comes to you after our first successful event in March, highlighting ‘Women in Sake’.

MEET THE TOJIS (BREWERS)

Featured at this event will be:

Takuma Inagawa of Wakaze Brewery, Paris, France

*It is one of the first of its kind….sake from France! Founder Takuma Inagawa and master brewer Shoya Imai combined their Japanese expertise with French influence to create an experimental sakagura making craft sake in Paris, France. The brewery respects tradition while breaking convention, using French ingredients and innovative techniques in their sakes.

Yuri Honda of Chiyonosono Brewery, Kumamoto, Japan

* Known as the Junmai expert, Chiyonosono was the first brewery to stop adding distilled alcohol to its sake after the rice shortages of World War II, paving the way for the popular Junmai category. Originally a rice wholesaler, Chiyonosono specializes in rice cultivation. Chiyonosono has access to heirloom strains and brews sake with distinctive rice textures and aromas.

Kazuhiro Yamada of Yamada Shoten Brewery Gifu, Japan

* Made in an ultra-handcrafted and traditional style at Kome Collective’s smallest brewery (280 koku), the kanji on the label translates to “nothing has changed since the beginning.”  Like their ancestors who did not have access to modern brewing technology, the Yamada family mills their own rice in-house (unheard of for such a small-production brewery), and they brew at ambient temperatures without heating or cooling controls.
